For the Chicken Marinade

2½ lbs chicken breasts, boneless and skinless, cut into medium pieces

1 tsp fresh garlic paste
1 tsp fresh ginger paste
1 tbsp Tandoori masala
1 tbsp Garam masala
Juice of one lemon
½ tsp Kosher salt (or to taste)
½ tsp freshly ground black pepper

Remaining Ingredients

3 tbsp vegetable oil
1 large red onion, sliced
2 medium Roma tomatoes, roughly chopped
1 green bell pepper, deseeded and sliced
¾ cup whole milk yogurt, whisked
½ cup fresh coriander leaves, chopped
2 green chilies, deseeded and sliced lengthwise
1 tbsp ghee (clarified butter)

Marinate the Chicken:

Rinse and dry chicken. In a large bowl, combine chicken with garlic and ginger paste, Tandoori masala, Garam masala, lemon juice, salt, vineager and pepper. and dip the chicken into the spices and fully covered, and let it marinate for 35 minutes.

Sauté the Vegetables:

Heat a kadai on a high flame . Add oil, then lower the heat to medium flame and add sliced onions. Sauté for about10-15 minutes until they turn golden. Add tomatoes, mix, and cook for another 4-5 minutes. Cover and let the onion-tomato mixture simmer for 10-15 minutes.
